Chocolate Coated Energy Balls

These chocolate-coated energy balls are the perfect pick-me-up healthy snack to have in the fridge. Packed full of healthy fats, and protein from the nuts and seeds, as well as lots of antioxidants from the cacao, dark chocolate and toppings. Rich in magnesium, calcium, iron, zinc, B vitamins, and vitamin E, these are a guilt-free snack, which you may need to hide a few from the kids.

Makes about 12

1 cup walnuts or pecans

1 cup almonds

1 cup dates, pitted and chopped roughly

1 tbsp tahini

1 tbsp raw cacao

1 tbsp maca (optional)

1 tbsp honey (optional)

TOPPINGS

1 block of organic dark chocolate (preferably 85%)

Toasted nuts, chopped

Dried raspberries

Cacao nibs

Organic desiccated coconut

Mix the nuts and dates in a blender until like fine breadcrumbs. Transfer to a bowl and mix in the tahini, cacao, maca and honey (if using). The mixture should stick together when you roll it into small balls. Add more tahini if it is crumbly.

When you have rolled the balls, prepare the chocolate coating. Heat a small saucepan with about an inch of water at the bottom. Place a ceramic bowl over the top, break up the chocolate and mix until melted. One by one roll the balls into the melted chocolate and place on a tray. Sprinkle with toppings of your choice and refrigerate for an hour or 2. Enjoy!
