Sprouted Sunflower Seed Hummus

Sprouted sunflower seeds... these are about to become sprouted sunflower seed hummus, and I will save some to sprout fully into sunflower shoots.

Sprouting nuts and seeds decreases the enzyme inhibitors in them, increasing the nutrient bio-availability. This means they are easier to digest and we get more goodness out of them.

You may think you don't have the time to do all of this but it's actually very quick and easy. It just takes a little pre-thought.

I have just soaked these seeds overnight in filtered water, the following morning rinsed them thoroughly and left them in a covered bowl for around another 8 hours. They have now grown little tails and can be moved to the fridge to slow down the sprouting process or turned into an easy hummus.

2 cups of sprouted organic sunflower seeds 3 tablespoons of tahini 4 tablespoons extra virgin olive oil juice and zest of 1 organic lemon 1 large clove of garlic season with sea salt Blend to a smooth consistency. Add a little water if necessary.

Sunflower seeds are a rich source of B vitamins making them good for the nervous system and for fighting against stress. They are also a great source of minerals such as magnesium, phosphorus, iron, calcium, potassium & zinc, amongst others.
